Our farmers allow the peppercorn fruit to ripen on the vine, then remove the skin, leaving the seed: the white peppercorn. This harvesting process makes white pepper hotter than black pepper, with a simpler flavor profile. Use it in white sauces, mashed potatoes, or to make authentic-tasting Chinese, Thai, and Vietnamese dishes.
